As an administrator, you can track video-meeting activity in your organization using the Google Meet audit log. For example, you can find out when a user starts a meeting, where they’re joining meetings from, and who was in a meeting.
We’ve not yet talked about mobile phones. The main data Google collects here is around your location, though it obviously tracks you through its apps as well—Gmail, Google Docs, Google Maps—just as it does on the web. On Android, you can open up Settings then pick Google to tweak some data-tracking options.

While in a meeting, you can use your phone for audio or add someone by phone. With any Google Workspace edition, you can connect Google Meet to phone numbers in the US and Canada at no extra cost. Supported Google Workspace editions can also dial-in to numbers from these countries and territories without additional costs.
Can Google Meet detect when you switch tabs?
Google Meet cannot detect if you switched tabs unless if you have allowed screen sharing where the instructor views your screen. Without sharing the screen, it is hard for the instructor to view your apps on the PC or on your phone. However, they can monitor your movements via the camera, which can tell your behavior.
