How to monitor Microsoft Teams user activity?
In the left navigation of the Microsoft Teams admin center, select Analytics & reports > Usage reports. On the View reports tab, under Report, select Teams user activity. Under Date range, select a range, and then select Run report. The Teams user activity report can be viewed for trends over the last 7 days, 30 or 90 days.

What does Microsoft Teams actually do with your data?
From what I could see, Teams hoovers up all your chats, voicemails, shared meetings, files, transcriptions, your profile details including your email address and phone number, and a detailed analysis of what you were wearing on the call. (I may have made up that last one.).
