Yes, you interpreted it correctly it is safe to use outlook for your mail with your gmail account. Windows (nor microsoft) will do anything with your gmail account. It only enables you to carry out the functions.

Well, gmail opens automatically on my phone. Yesterday, for the first time, it said to log in. When I went to do that it wasn’t the normal log in but I had to give permission for Microsoft apps & services to access my email. I did that and then got a Google Security email saying I had done this and now Microsoft apps could read, send emails etc.

Under data protection laws Windows needs to ask your permission to grant access, It all makes common sense really 😉 By ganting access my Gmail account is now synced to Windows Mail, my Google Calendar events now show up in my Windows Calendar and my Google contacts now show up in the Windows People App. Perfect logic in my opinion ;).
